California's Hmong community is concentrated in the Central Valley and the Sacramento region rather than distributed statewide, and the restaurants in this list largely follow that geography — but not a single cuisine. Hmong people have never had a country of their own, and successive resettlements mean Hmong-owned kitchens here cover a wide range: Korean BBQ, Thai and Vietnamese restaurants, Chinese buffets, and American diners alongside places serving khaub poob — the rice-noodle soup also spelled khao poon — laab, fresh-pounded papaya salad, and grilled meats shaped by shared history in Southeast Asia and the refugee camps. One thing distinguishes the California context: the Central Valley's agriculture means some ingredients that are imported or seasonal elsewhere are simply grown nearby, and a number of Hmong families in the region have farmed commercially for decades. Most kitchens here, whatever they serve, remain family-run and cook from recipes passed down rather than standardized, so the same dish or style will differ meaningfully between two restaurants. That variation — and the range of cuisines itself — is the point rather than a defect.
